I am thinking in taking the test next year to change my status. I really hope to pass the exam so that it would be easier for me to become a US Citizen.

I know I need to do a lot of study but I don't care as long I will achieve my goal. It is tiring to renew the papers every now and then.

It's Unfair

I just talk to my friend online and she tells me that she has problem regarding her blog submission to one blog advertising. The company claims that she just copied her other post from other blogger.

I know her and she won't do that, I 'm not sure how there system work but one thing I am sure it is unfair to her when she work hard for all her post.

Lack of Energy

I don't know what's going on, I observe that I can't handle to write many things anymore every time I try to write something my brain didn't function well. I know there is something wrong probably too much stress.

It's been a week when I slow down to write things because my husband told me to stay away in the computer for a little bit. I know he is right because I can tell how tired I am everyday.

Waiting For food

I try to take a nap so that I will fell well but I can't sleep so I decided to get up and make something to eat. It’s already 4:23pm and I don't eat anything yet since morning.

I am starving now but I need to wait 20 minutes more before the food will get done. I am so lazy to eat earlier due to no sleep from last night.

My Hubby and I got home 4:30am we work until late in the morning:)

Crazy

I am crazy when I seen big fish in my net. I don't know which one to catch because all of them look so yummy. After wondering for a while when one to catch I decide just to catch one.

After I'm done fishing and check my net again if the big fish are still there they disappear so quick. I can tell that so many fishermen out there starving LOL.

Anyway I hope you catch a big fish tonight happy fishing and enjoy catching:)

Caldereta

Ingredients
2 lb Lamb, beef or goat, cut into -1 1/2-inch cubes
3 tb Distilled white vinegar
1 1/4 ts Salt
Freshly ground black pepper
4 tb Olive oil
3 Whole dried hot red chiles
5 Garlic cloves, peeled and -minced
1 lg Onion, peeled and minced
1 t Whole black peppercorns
1 Two-inch cinnamon stick
2 Bay leaves
4 ts Tomato paste
2 md Potatoes
1/2 lg Red bell pepper
8 Whole stuffed green olives
Directions
Put the cubed meat into a bowl and add the vinegar, salt and pepper. Set aside for 30 to 40 minutes. Drain the meat, saving the liquid, and pat it dry.
In a large heavy saucepan, heat the oil over medium heat. When it is hot, add the chiles. Stir for a few seconds or until they swell and darken. Remove chiles with a slotted spoon and set aside. Put as many cubes of meat into the pan as will fit without crowding.

Brown the meat on all sides and repeat until all of the meat is browned. Remove meat from pan.

Put the onion and garlic into the pan and cook for 2 minutes, scraping up any pan juices. Put in the black peppercorns, cinnamon and bay leaves. Stir and cook another minute. Return the meat to the pan with its accumulated juices, the chiles, the reserved marinade and the tomato paste. Stir and cook for 1 minute. Add 2 cups water and bring to a boil. Cover, turn the heat to low and cook for 15 minutes.

Meanwhile, peel the potatoes and cut them into 1 1/2-inch cubes. When the meat has cooked for 15 minutes, add the potatoes. Cover and continue to cook for 45-60 minutes or until the meat is tender. Seed the bell pepper and cut it into 1/4-inch wide strips. When the meat is tender, put the peppers and olives into the stew. Stir and cook another 3-5 minutes.

I took this picture at Valley Fair it was fun to go there and I hope we can go back there again before the summer end. I am going to cross my fingers:)

Mechado (Filipino beef stew)

Ingredients
1 k. beef (cut into pieces)

cooking oil

4 cloves garlic (crushed)

1 onion (sliced)

2 . potatoes (quartered, fried)

1 carrot (cut round)

2 tbsps. lemon juice

2 tbsps. soy sauce, salt, peppercorn

1 cup tomato sauce

1 pc. Laurel

hot water
Directions
Brown meat in cooking oil. set aside.
In same oil sauté garlic and onion. add lemon, soy sauce, peppercorn, tomato sauce, laurel and salt, simmer for a few minutes then add water. cover and simmer.
Add potatoes and carrot when meat is tender

Hungry

After working for a while in the computer I am starving now I just make noodles for myself since it’s the quickest way to prepared something to eat.

I'm not sure what I am having for supper my husband will be home late again so I still have time to think what to make before he arrived at home.

Lazy Day

I am so lazy for the whole day I don't fell like doing any chores aside from blogging. My Husband just called me and checking what I am doing.

He was surprise to find out that I was still in bed for about 2:00pm. He told me to get a rest that I need and stay away in the computer for a little bit.

I know he can tell that I am exhausted for working so hard:)

I really like this Lengua I always prepare it at least three times in a week. For mom's out there try this one I'm sure your hubby and kids will love it.

Serves: 4 - 5
Ingredients
1 piece ox-tongue, thoroughly cleaned and sliced
Lea and Perrins sauce
salt and pepper
10 pieces calamansi
3 cloves garlic, crushed
2 medium onion, sliced
1 can (12 ounces) Cream of Mushroom soup
button mushrooms
button olives
4 tablespoons butter
1/4 cup grated cheese
Directions
Marinade ox-tongue in Lea and Perrins sauce, calamansi, salt and pepper for an hour. Fry tongue and when browned, braise for 30 minutes. Saute garlic and onions in butter. Add soup. Garnish with mushrooms, olives and grated cheese.

Pancit Canton

Ingredients
1 whole chicken, hacked into pieces, boiled in a big casserole with one medium sized onion, 2 sticks of celery and pepper corns. Cover chicken with enough water. Remove meat from bone and don't forget to save the stock!
1 lb pork, sliced into thin strips
1 cup shrimp, cooked, deveined and unshelled
1 can straw mushrooms
1 can water chestnuts
1/2 head of bok choy (pechay) or 1/2 head cabbage, sliced into julien (sp) strips
1 piece of carrot, julienned a few pieces of snow pea pods
1/2 lb mussels or scallops (optional)
soy sauce to taste
patis to taste
salt to taste
2 cloves of garlic, chrushed
1 medium sized onion, sliced ground black pepper, fresh if you can
oil for frying
1 or 2 packages of pancit canton or a package of vermicelli or angel hair pasta. If you really can't find pancit, try egg noodles - although they may be soft, or spaghetti if you're that desperate
4 or 5 green onions
1 lemon
Directions
Heat oil in a pan (or wok if possible). Sautee garlic and onion slices until the onion is transparent. Add chicken and pork. Cook until pork is brown. Add half of the chicken stock. Boil for about three minutes. Add salt, soy sauce or patis to taste. Also sprinkle some ground black pepper. Simmer for about another three minutes. Add shrimps, mushrooms, carrots and other ingredients except the noodles itself. Simmer for another 3 minutes or so (covered). Add the remaining stock. Adjust the taste with salt, pepper, patis and soy sauce. Add the noodles. Mix thoroughly until noodles are soft.
Garnish with sliced green onions and sliced lemon. Serve with lemon juice.

Ingredients
1 kilo (2.2 lbs) chicken or pork, cut in serving pieces
1/4 cup vino blanco or five-year-old rum
4 tsp. soy sauce
5 cloves garlic

1 cup buko juice (coconut water)
1 small head garlic, crushed
Directions
1. Marinate the meat in the vino blanco or rum, soy sauce, garlic, salt, pepper and vinegar, for at least two hours. Drain.
2. Fry meat till golden, pour off excess oil and add buko juice. Simmer till tender and adobo begins to give off oil. Fry the extra garlic and sprinkle on the adobo before serving.

Lumpia with Sweet Potatoes

Ingredients
1 c Pork, finely cubed
6 tb Lard
3 Cloves garlic, minced
1 md Onion sliced
1/2 c Diced bean curd
1 c Raw shelled deveined shrimp
1 c String beans, cut into 1" -pieces
1 c Cabbage, cut into 1" squares
1 c Cubed sweet potatoes
Salt to taste
1 Stalk celery, finely chopped
20 Lumpia wrappers (recipe -below)
Lumpia sauce (recipe below)
----------------------LUMPIA WRAPPERS---------------------------
3 c Flour
1 tb Salt
5 c Water
Pork fat
------------------------LUMPIA SAUCE-----------------------------
6 tb Cornstarch
1 c Water
1/2 c Soy sauce
1/2 c Brown sugar
Directions
Boil the pork in a pot until tender and the fat comes out. Remove the pork from the pot and drain. Put the lard in a large skillet and saute the pork, garlic, onion and bean curd. Add the shrimp, string beans, cabbage, sweet potatoes and a little water. Season with the salt and cook over medium heat until tender. Set aside on a platter to cool, add the celery on top.

LUMPIA WRAPPERS
Sift the flour into a bowl. In another bowl, mix the salt with the water. Add 1 cup of salted water to the flour to make a stiff dough. Beat the dough hard against the sides of the mixing bowl to soften and make it elastic. Add more of the water to soften the dough. Continue beating and adding water until the mixture becomes very elastic and has a consistency of heavy cream. Use only enough water to achieve this consistency. Heat a frying pan greased with pork fat and pour in about 2 tablespoons of the thin batter, tilting the pan to spread the batter as thin as possible. Turn the wrapper when it can be freed from the frying pan And fry quickly on the other side. Remove from pan. Do the same with the rest of the batter.

To serve, put 2 tablespoons of lumpia mixture in each wrapper and fold into a tight roll. Serve with lumpia sauce.

LUMPIA SAUCE Cook over low heat until thick, stirring constantly. Remove from heat and let cool.

My Husband just check the ticket going home in the Philippines he found out that when we go there at Christmas season it will going to cost us more about more or less $3,000.

I’m not sure if we we’re going to go home because it’s cost a lot. If I don't meet my sister in hongkong when time we go home I will be the one who will visit her.

My girls have visitors here at home and until now I didn't make any for them. I'm not sure what to make since I need to finish some tasks before I prepare some lunch.

Not Enough Sleep

Last night I just keep tossing and turning again. I'm not sure if I am over stress because my belly doesn't fell so good for the whole night.

Rice Roni

I am starving this morning and I decided to make myself a rice roni after I get done cooking I make the rice cool for a little bit and start eating.

I fell much well now I think I am going to take a nap after I made lunch for the girls. My daughter is so contented because her cousin was carrying her for the whole time.

I hope the take care my daughter until I'm done with my entire chore.

Post Office

My Husband and I went to office this morning to send some birthday gift to my nieces finally we made it today. I hope they got it on time.

I'm sure my nieces will be happy on their birthday and it will make their day better. How I wish I can spend time with them but I need to wait and see next time.

I can't believe how time fly so fast it's already 8:39pm now and I still don't anything for supper. Well, I am thinking in having Bopes tonight since the last time I have it was very long time.

Ingredients
1 kilo pig lungs
1/4 kilo pork fat
Lard for sauteing
1 head garlic, minced
1 medium onion, chopped
3 medium tomatoes, chopped
Vinegar
2 medium radishes, cut into thin strips
4 medium bell peppers (red and/or green), cut into thin strips
Salt to taste
Directions
Wash and boil the pig lungs and fat; cool, then chop finely. Saute the lungs and fat in lard with garlic, onion, and tomatoes. Add vinegar and simmer until almost dry. Then add the radish and pepper strips. Season with salt.

Cows In Our Yard

I got scare when my step daughter scream I taught there are some fire. When I check it was a cow having good time in our yard. The neighbor probably didn't notice that their animal is roaming around.

I suppose to take picture but my daughter won't stop crying so I decided not too. I'm sure the cows having fun because my girls feed them some crackers.

Until now the cows still in our yard but I hope soon the owner recognize that there are some missing in their barn so that they can rest well at night:)

I am so lazy today I didn't do much aside from blogging. My baby is so good and she is just playing and asked milk if she is hungry how I wish she is like that forever.

Later Time To Eat

I am craving some food and here is the recipe I hope you like it guys and have fun cooking:)

Crispy Pata

Ingredients
4 pig's trotters
1 tsp. salt
1/2 tsp. white pepper
1/4 tsp. MSG
oil for deep frying
Directions
Wash the pig's trotters under running water and place in a large pan. Cover completely with cold water. Bring to a boil and season with salt, pepper and MSG. Cover the pan with a tight fitting lid, lower the heat and simmer gently until meat is cooked. Drain meat. Heat the oil in another large pan until it is almost smoking. Deep fry trotters for a few minutes until the skin is golden and crispy.

My Baby is Bored

My Daughter is bored seating down in her stroller for a while I was so busy doing my things because later I have planned to go bed early.

I want to be done with it so that tomorrow is another chore for me. I admit that sometimes I am so busy I don't have enough time for her.

My Darling is awake now I hope she will behave until I will finish my tasks online. I still have few tasks to finish and I need to visit some friend's website.

I am just wondering when I seen this picture if the mall is done it's been more than a year since it was under construction. My Hubby took this picture when we are in 7th floor in great eastern hotel in Makati.

It would be nice if they have my favorite fast food there so that I don't need to go in Glorieta mall just to eat although have so many restaurants but I like Jollibee it's the most for me:)

Embutido

It's been more than two years since I don't have embutido for supper today I dig some recipe in my other site so I am planning to make this for supper.

I'm sure after missing this for more than two years I will have a yummy dinner together with my husband what about you can you think of any good menu for supper?

Ingredients
2 lbs ground pork
2 eggs, lightly beaten
2 hot dogs, chopped
1 onion, chopped
1 red bell pepper, chopped
1/2 cup sweet pickle relish
1/2 cup tomato sauce
1 cup shredded bread
salt
pepper
soy sauce
1 stalk celery, chopped
2 tablespoons powdered milk (optional)
Directions
1. Combine all ingredients in a bowl.
2. Mix thoroughly.
3. Roll 1 ½ cups of mixture in foil.
4. Steam for 1 hour.
5. Let cool.
6. Chill for 4 hours or overnight.
7. Slice diagonally

I really don't know what to eat I'm just done preparing lunch for my husband but when I was in the kitchen I can't think what I want for lunch.

I just have a little grilled cheese then water. I am really starving but I don't like what we have in the kitchen. I hope later I can decide what I want so that my belly fell much better.

Lunch Break

My daughter is starving too for sure, since morning she just have one bottle of milk. Yesterday when I was feeding her rice cereal she doesn’t want to open her mouth.

My Husband and I went to the zoo last year its about 30 minutes travel from our place I didn't care much for the animal but when we get there I have so much fun feeding them:)

Out For Shopping

My Husband and I have planned to go out for shopping this afternoon. He is still sleeping right now while I am doing my online chores.

I don't want to wake him up because he arrived so late this morning. I am going to give him enough rest that he needs because he work so hard lately.

I hope we get home before it's too late in the evening I have so many tasks to finish online and I want to be done with it:)

I Can't Believe

I can't believe until now how lucky I am to get page rank I can see many offers in my dashboard (nagsiga) before when I don't have any rank I need to seat down in the computer for many hours.

Now I don't need too because I will be the one who will choose. Well, I am hoping that my page rank will stay for little bit longer so that I have the time to enjoy.

Breakfast Casserole

I am starving right now but I am not sure yet what we're having for supper. Today I dig some recipe that I am going to prepare for tomorrow.

It would be nice to share the recipe to you my dear readers I hope you will like it and have fun doing it:)

Here it is:

INGREDIENTS (Nutrition)

1 (10.75 ounce) can condensed cream of chicken soup
1 (16 ounce) container sour cream
1 (2 pound) package frozen hash brown potatoes, thawed
1 cup cubed, cooked chicken meat
1 cup diced ham
1 onion, chopped
3/4 cup shredded Cheddar cheese
1 cup crushed potato chips
1/4 cup butter, melted

DIRECTIONS:

Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.

Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes.

My Baby In The Cart

My Husband and I went shopping some tools in Menards and we decided to put my baby in the cart. At first I didn't agree my husband but I want to see if my baby is old enough to seat down in the cart.

She has fun riding in the cart although she can't balance her body yet but I can see how excited she is roaming in the store. I hope she will become a big girl soon so that she can walk by us.

Fried Rice

My husband and I just have pancake for dinner I really don't like it but I don't want to make another menu for myself. Tomorrow I am planning to make fried rice.

Here is the Recipe:

Ingredients:

1 - 2 green onions, as desired
2 large eggs
1 teaspoon salt
Pepper to taste
4 tablespoons oil for stir-frying, or as needed
4 cups cold cooked rice
1 - 2 tablespoons light soy sauce or oyster sauce, as desired

Preparation:

Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.

When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

Lumpiang Sariwa

Ingredients
1 small onion, chopped

2 tbsps. cooking oil

Directions
Cook onion and garlic in oil until tender. Add pork, shrimp, garbanzo beans and ham.Simmer uncovered for 5 minutes, stirring frequently. Add carrots, green beans and water. Cook for another 5 minutes. Add cabbage and salt, stir until cabbage is done. When all of the vegetables are cooked, let the dish cool. To prepare egg roll wrappers, cook one side only on a lightly greased skillet until wrappers are slightly brown. Cook one side only.
To assemble, place an eggroll skin unbrowned side up on one corner facing you.Top with a lettuce leaf and 1/3 cup cooled vegetable mixture. Roll up, folding in one end of eggroll wrapper and leaving other end open. Serve immediately with Brown Sauce.

*Brown Sauce In a saucepan, mix 1/2 cup sugar and 1 tbsp. cornstarch. Stir 1 cup chicken broth and 2 tbsps. soy sauce. Cook and stir until mixture bubbles, lower heat and add 1 clove finely chopped garlic. Cook until thickened.

I am really starving now I can't handle anymore I need to go in the kitchen and make something for myself. My baby is start screaming now and she wants my attention.

I am planning to make noodles because it was quickest way to have lunch. I know it doesn’t sound so good but I don't care as long my stomach will be fine.

Just Hoping

It's about 2:53pm at my time I never have lunch yet. I fell so hungry but I am not done yet doing my things online. I am so happy that I have just few left.

If I well be done with the tasks for today I think I well sleep well tonight. If I have pending tasks I don't have patience of mind that's why I want to finish it as long I have free time.

Thursday Diary

Last night I was working with my tasks online I gave up because my belly doesn't fell so good. I lye down and try to take a nap finally after few minutes I fall asleep.

Later on my belly wakes me up again since hubby is not home yet I called him and let him know. After a while he arrived and comforts me.

Today he suggests me not to work hard and just relax while I am doing my things. I hope I can do that when my job is so stressful sometimes LOL:)
